  • 4 large potatoes, peeled and cut into thin fries
  • 2 tablespoons of vegetable oil
  • Salt and pepper, to taste
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of sour cream
  • 2 tablespoons of chopped cilantro

Tasty and easy snack that can be made in less than 30 minutes. It is perfect for sharing with friends or family, or enjoying by yourself

    Preheat oven to 425°F and line a baking sheet with parchment paper.

    In a large bowl, toss the fries with the oil, salt, and pepper, and spread them in a single layer on the prepared baking sheet.

    Bake for 15 to 20 minutes, or until golden and crisp, flipping halfway through.

    In a small bowl, stir together the onion, bell pepper, tomato, corn, lime juice, cumin, chili powder, salt, and pepper, and set aside.

    Sprinkle the cheese evenly over the fries, and return to the oven for another 5 minutes, or until the cheese is melted.

    Transfer the fries to a large platter, and drizzle with the sour cream.

    Spoon the salsa over the fries, and sprinkle with the cilantro.
